IMO Castiel cares about Sam because Dean cares about Sam, because Sam is Dean's brother. God, just look at the icon, the way he was hovering over Dean like the guardian angel he is. Btw, there're not many Sam/Castiel fics yet, just the odd one here and there.

As for Sam/Gabriel, to be honest, I just don't get any slashy vibe between them!
